"Salmon
Wrapped In Proscuitto-Ham"
1- 3 to 4 Oz. skinless Fillet
per serving (4" or so long)
1- Large slice Proscuitto per fillet
1- Tablespoon Olive oil per fillet (for pan searing)
1/3 teaspoon Fresh cracked pepper per fillet
No Salt is needed as the Proscuitto ham provides the saltiness
for this recipe. 2 cups glazed walnuts (divided amongst the fillets)
as garnish. glaze with 1/2- 1. Cup brown sugar.
Rice pilaf (optional)
Prepare Walnut FIRST set aside:in a non-stick frypan
Heat nuts on high for 1 minute, add sugar and 3 tablespoons water.
Stir until sugar is dissolved and nuts are coated fully and glazed-
set aside for later- the nuts crunchy-sweet compliment the savory
ham and fish.
Prep fillets by rinsing and patting dry with paper towels.
Liberally pepper each side of fillet and wrap fillet in ham with
seam side on the back (skin) side.
Heat 1T. Oil per fillet in pan on High until the oil starts to
smoke a little. The pan is now ready.
Slide prepared fillets into pan seam side down and sear until
ham is crispy and or golden, (4-6 minutes depending on your burner).
NOTE: Cook fish UNCOVERED as a lid will produce steam
(cooking the fish TOO fast) and will inhibit the searing.
Flip fillet and lower heat 15% sear for another 3-4 minutes until
ham is crispy again.
Remove from heat, blot excess oil (if any) with paper towels and
serve topped with the walnuts on a bed of warm rice with a side
of your favorite vegatable, salad and wine.
